Time for borshch!
September 13, 2025 is National Borshch Day in Ukraine!

Ukrainians began making a dish known as 'borshch' between the 5th and 9th centuries AD - using mostly leaves. By the 15th century, variations of the soup had spread widely across Eastern Europe and, the addition of using the entire beetroot ball as the main ingredient became more popular.
In 2020, Ukrainian chef and social activist, Yevhen Klopotenko documented the extensive and interesting history of borshch, culminatng in the film: Borsch: The Secret Ingredient.
The importance of this staple traditional national cuisine was officially recognized in 2022 when UNESCO inscribed the "Culture of Cooking Borscht" on its list of 'Intangible Cultural Heritage in Need of Urgent Safeguarding.'
There are many different regional and family recipes (and spellings) - the one shown is found on page 11 of the UCWLC of St. George's Cathedral Cookbook. With only one line of instruction, really.... how hard can it be?
This popular cook book was reprinted in 2020 from the original 1970 edition - and available for purchase from the Museum gift shop.
